thinking about building a sunroom - what if I skip the paperwork?

Been daydreaming about adding a sunroom to chill in, but um...hypothetically, what happens if someone just goes ahead without dealing with permits and all that official jazz? Would they even notice, or would it bite me later somehow?

I've wondered about that too, honestly...but doesn't skipping the paperwork come back to haunt you when selling the house or dealing with insurance claims? Seems like saving a few bucks now might cost way more later. Anyone here have actual experience with this?
